I went crazy making deserts last weekend and then found that I had run out of cake tins mid food processing....lol
anyway.. here are the ingredients:
Crust: 2 Cups Almonds or Pecans, 1/2 Cup dates, pitted and soaked
Filling: 2 Cups Strawberries, 1cup Coconut oil, 1c soaked cashews, 2 tsps Vanilla extract, 1/2 c raw honey.
To Prepare Crust :
In a Food Processor grind the nuts until fine.
Process until mixture forms a dough like consistency.
Press into cake tin using fingers until base is completely covered.
Place in the freezer until filling is ready.
Blend together filling ingredients until smooth and then spread on top of base. Freeze for a minimum of 3 hours. Good 2-3 days in fridge.
and there you have it!! Strawberry Pie. ;-)

Why Raw and Living Foods?
I don't consider this a diet...when I use this term I use it quite liberally because I don't want it to imply any type of sacrifice that has to be undertaken. Eating raw has nothing to do with giving ANYTHING up, in fact its all about letting the goodness IN!! This is a gift, its a very rewarding, self-empowering healing gift.

So....Whats new?
Yes, its been quite a while...Ive been super busy in the kitchen!...just completed my raw food chef training by Russell James and since then Ive felt truly inspired and motivated. Ive been making all manner of things raw...and having a blast! Russell has a great way of braking things down into bite size pieces (pardon the pun) parceled into easily digestible nuggets of wisdom!! He is truly gifted and makes everything he creates look absolutely divine!
I'm experimenting with making raw cakes at the moment..playing around with different flavours and they are GOOD! just need to get them looking a tad more presentable and they will be flying out of the fridge. All of a sudden friends and family just happen to be in the neighbourhood!!!...mmm I'm loving this new found skill...i'm visiting catering shops and kitchen stores and investing in new utensils...and still praying for my de-hydrator and vitamix...mmmmm...

Introducing my new love -Maca Magic......yayyyyyy!
Ive been trying to upload a video for you guys demonstrating how to make my most perfect Maca Nut Mylk... so you'll have to watch this space...one day soon....I promise!!

Taking the Path Less Trodden.....
Has certainly been an emotional one to say the least!....I find the more raw I introduce into my body the more my body zings! Infact, I feel much more intune with my body than Ive been in a long while. I love this feeling.
Since the JF Ive been more or less following the same flow of Green smoothie for brekkie and lunch, or sometimes a superfood smoothie for lunch and dinner a raw soup or salad. Twice a week I'll have a lightly steamed dinner of wholefoods usually Quinoa or squash or sweet potato....with a raw salad or veg.
I certainly feel much different now to that when I was juice-feasting! ...well, for starters I feel heavier for the obvious reason that I'm eating and Ive managed to put on a few more pounds although I have faith that my body will balance the weight out within 3 months. I'm not in a rush with it, its more important for me to feel great within myself, and the rest is peanuts! and by that I mean to feel fully nurtured, alive, sleeping right, balanced moods, energetic, powerful digestion, and to be grateful!.... :-). Ive also gotton real organised with my office and have been so creative in the kitchen!...I will post up some pics of recent developements there!
None of my friends eat this way but..they will...joke....I just want to be the change that I want see in this world and can hopefully encourage others to do the same in whatever way they shine! I plan on inviting my family over for a raw dinner party, schhh...dont tell them...its as soon as the de-hydrator arrives!..
